Caper Bush

Caper Bush, also known as the Flinders Rose, is a hardy perennial found throughout the Mediterranean. The shrubby plant is extremely drought-resistant, and grows well in salty soil. It has fragrant pink-white blooms, but it's best known for its dark green flower buds, capers, which are typically salted, brined, or pickled for culinary use. Capparis spinosa has a rich ethnomedical history, and research indicates that caper extract may have antioxidant properties.
